Step 1: Cook rice according to package directions.
Step 2: Meanwhile in a pot over medium high heat add the oil and heat oil and then add he cauliflower and salt and cook for 5 minutes or until cauliflower begins to get tender.
Step 3: Stir in chickpeas and sauce and bring to a simmer; cover and cook for 10 minutes or until cauliflower is tender.
Step 4: Serve over rice and top with cilantro, if desired.
