Step 1: Melt butter in 4-quart saucepan.
Step 2: Add onion and cook over medium-high heat 1-2 minutes or until onion is softened.
Step 3: Stir in flour and red pepper.
Step 4: Add chicken broth and half & half.
Step 5: Continue cooking, stirring a lot, 4-5 minutes or until mixture comes to a full boil.
Step 6: Add chicken, rice and stock.
Step 7: Continue cooking, stirring occasionally, 2-3 minutes or until heated through.
Step 8: Remove from heat.
Step 9: Stir in cheese until melted.
Step 10: Ladle into serving bowls.
Step 11: Sprinkle each serving with parsley.
