Ingredients
- 1/4 cup water
- 3 tablespoons red-wine vinegar
- 2 tablespoons honey
- 4 teaspoons Dijon mustard
- 1/2 teaspoon ground black pepper
- 1 medium Granny Smith apple, cored and cut into 16 slices
- 8 cups (8 ounces) baby spinach
- 1 small red onion, peeled and sliced
- 8 ounces sliced fresh mushrooms
How to Make

Step 1: Combine first 5 ingredients in small bowl, stirring with a whisk to make the dressing.

Step 2: Place apple slices in large bowl. Spoon 2 tablespoons dressing over apples; toss to coat

Step 3: Add spinach, onions, mushrooms and remaining dressing; toss to coat.
