Step 1: Remove the stem and leaves from the cauliflower, break the head into smll florets, place them in a food processor and pulse them until they look like small grains of rice. Do not over pulse you do not want them pureed.
Step 2: Place the riced cauliflower in a microwave safe plate and microwave for 8 minutes or place place the riced cauliflower on a large cookie sheet,cover with foil and bake in 375f for 12 minutes, let it cool
Step 3: Preheat the oven to 450f
Step 4: Mix together the cooled cauliflower, 1 1/2 cups cheese, beaten eggs, garlic and oregano
Step 5: On a lightly oiled cookie sheet form the cauliflower mixture into two 9 inch rounds, Paint the tops lightly with olive oil
Step 6: Place in 450f oven for about 15 minutes or until they are golden on top
Step 7: You can continue straight on or make the crusts early in the day and dress them just before you want to serve them
Step 8: Preheat oven to 450f Whatever topping you want must be pre cooked and added to the crust piping hot. In a lightly oiled skillet stir fry the mushrooms and onion until they start to brown about 6 minutes
Step 9: Add the peppers and the vermouth, stir fry for 3 minutes, remove from heat and immediately dress the pizza
Step 10: While the peppers are cooking put the pizza sauce on the two pizzas, Add the hot pepper/onion mixture and top with the left over 1/2 cup of cheese
Step 11: Pop the pizzas into a preheated 450f oven for about 5 minutes or until the cheese has melted
Step 12: Serve one whole pizza to each person on a plate with knife and fork Enjoy
