Ingredients
- 15 ounces beets, diced, drained (1 can)
- 1 cup green bell pepper, diced
- 1 French shallot, minced
- 2 cups spring lettuce leaf mix
- Dressing
- 8 tablespoons olive oil
- 2 tablespoons vinegar
- 2 teaspoons tarragon vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/16 teaspoon paprika
How to Make

Step 1: Mix the beets, peppers and shallots in bowl.

Step 2: Mix dressing and season to taste.

Step 3: Add as much or little dressing as you like.

Step 4: Toss with beet mixture.

Step 5: Place on top of lettuce.
