Step 1: Soak the beans overnight in 6 cups of water.
Step 2: In the morning, drain and rinse the beans and place them in a large pot. Pour 4 cups of water into the pot and bring to a boil, over medium-high heat.
Step 3: Once the water starts to boil, reduce the heat to medium-low and simmer for 30 minutes.
Step 4: Once the beans have simmered for 30 minutes, pour the contents into a crock pot.
Step 5: Cut a cross, about 1/4 of the way, on the top and bottom of the onion and place it in the crock pot.
Step 6: Add the remaining ingredients and cook over low heat for 6 to 8 hours or until the beans are soft. Check the crock pot every so often, to see if you need to add water.
Step 7: Once the beans are cooked to your desired consistency, remove and discard the onion.
Step 8: Remove the salt pork, tear it apart with a fork, and return it to the beans. Stir and serve.
Step 9: *NOTE* You don’t want the beans to dry up as they will be hard and not edible, so make sure to take a peek every so often to see if they need a bit more water. This will depend on your crock pot; they all cook differently.
