Leonard Botello IV‘s Truth Tater Tot Casserole

Ingredients
- 1/2 pound butter, melted
- 10 ounces cream of mushroom soup (1 can)
- 48 ounces cheddar cheese, shredded (6 cups)
- 2 1/2 teaspoon Cajun seasoning
- 16 ounces sour cream, (2 cups)
- 10 ounces Rotel tomato and chilies (1 can)
- 1 cup white onion, diced
- 8 ounces bacon, diced, rendered, (1 cup)
- 32 ounces frozen tater tots (1 bag)
How to Make

Step 1: Bake tater tots per directions and mix with all ingredients and four cups of cheese.

Step 2: Pour into a casserole dish and bake at 350 degrees until bubbly about 30-40 minutes.

Step 3: Top with remaining cheese and cook an additional 15 minutes, using the broiler for the last five minutes or so to get a nice browned top.

Step 4: Let cool slightly before serving in order to let the casserole set up a bit.
