Step 1: In a 1 1/2 qt. sauce pan, melt butter over med heat.
Step 2: Add onion, stirring constantly, until soft but not brown, translucent.
Step 3: Stir in flour and cook one minute, stirring constantly.
Step 4: Add stock all at once and whisk until smooth.
Step 5: Stir in all remaining ingredients seasoning to taste and bring to boil.
Step 6: Reduce heat to medium low and cook, stirring frequently, until thickened, about 10 minutes.
