Ingredients
- 12 chicken breasts, cooked, boned, shredded
- 1 pound spinach leaves
- 2 heads lettuce
- 1 bunch grapes
- 2 pints cherry tomatoes, halved
- 1 red onion, sliced in rounds
- 3 cans mandarin oranges
- 8 ounces roasted peanuts
- 8 ounces raisins
- For the dressing:
- 1 cup lemon juice
- 1/2 cup honey
- 3 pinches cayenne pepper
- 4 teaspoons salt
- 7 teaspoons poppy seeds
- 4 teaspoons dijon mustard
- 1 1/2 cups vinegar
- 1 1/4 cups olive oil
How to Make

Step 1: Prepare dressing by combining all the dressing ingredients in a jar.

Step 2: Marinate chicken overnight in 1/3 of the dressing.

Step 3: In a large serving bowl add the marinated chicken and the next 8 ingredients (-raisins).

Step 4: Add the remainder of the dressing and toss.
