- 16 ounces frozen green beans, thawed
- 15 ounces cannellini beans, drained, rinsed (1 can)
- 2 tablespoons black olives, sliced
- 1/2 cup red onion, thinly sliced
- 2 tablespoons fresh mint, minced
- 2 tablespoons fresh flat leaf parsley, minced
- Dressing
- 4 tablespoons extra virgin olive oil
- 1 lemon, grated rind, juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
