Step 1: Heat the olive oil in a large pot over medium heat. Add the beef stew meat and brown it on all sides. Remove the meat from the pot and set it aside.
Step 2: In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
Step 3: Add the carrots, celery, and potatoes to the pot. Stir and cook for about 5 minutes until the vegetables start to soften.
Step 4: Return the browned beef to the pot and mix it with the vegetables.
Step 5: Pour in the beef broth and diced tomatoes with their juice. Stir in the tomato paste, dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a boil.
Step 6: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 hour, or until the meat is tender and the flavors have melded together.
