Step 1: Preheat your grill or stovetop grill pan to medium-high heat.
Step 2: In a small bowl, mix together the dried thyme, dried rosemary, paprika, garlic powder, onion powder, and black pepper to create the seasoning blend.
Step 3: Season the chicken breasts on both sides with salt, black pepper, and the prepared seasoning blend, pressing the seasoning into the meat.
Step 4: Drizzle the olive oil over the seasoned chicken breasts, rubbing it into the meat to coat evenly.
Step 5: Place the chicken breasts on the hot grill or grill pan. Cook for about 6-8 minutes per side, or until the chicken is cooked through and no longer pink in the center. Adjust the cooking time as needed based on the thickness of the chicken breasts.
Step 6: While the chicken is cooking, prepare the herb butter. In a small bowl, combine the softened butter, minced garlic, finely chopped parsley, finely chopped thyme, finely chopped rosemary, lemon zest, and a pinch of salt. Mix well until all ingredients are thoroughly incorporated.
Step 7: Once the chicken breasts are cooked through, remove them from the heat and let them rest for a few minutes.
Step 8: Top each chicken breast with a generous dollop of the herb butter, allowing it to melt and infuse the meat with its aromatic flavors.
Step 9: Serve the Welsh Wolfman Chicken alongside your favorite sides, such as roasted root vegetables, mashed potatoes, or steamed greens, to complete the rustic Welsh experience.
