Step 1: Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top. Set aside.
Step 2: In a large bowl, toss the chicken wings with olive oil until evenly coated.
Step 3: In a small bowl, combine the garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper. Sprinkle this spice mixture over the wings, tossing well to ensure all wings are coated with the seasonings.
Step 4: Optional: For enhanced flavor, cover the seasoned wings and marinate in the refrigerator for 1-2 hours. This step allows the flavors to penetrate the meat. If you're short on time, you can skip the marinating step and proceed to the next step.
Step 5: Arrange the seasoned wings in a single layer on the wire rack placed on the baking sheet. This allows air to circulate around the wings, resulting in crispy skin.
Step 6: Bake the wings in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through. Flip the wings halfway through the cooking time to ensure even browning.
Step 7: While the wings are baking, prepare the sauce. In a small bowl, whisk together the hot sauce, melted butter, honey (if using), garlic powder, cayenne pepper, and smoked paprika. Adjust the heat level by adding more or less cayenne pepper.
Step 8: Once the wings are cooked, transfer them to a large mixing bowl. Pour the hot sauce mixture over the wings, tossing well to evenly coat each wing.
Step 9: Return the sauced wings to the baking sheet and bake for an additional 5 minutes, allowing the sauce to adhere and slightly caramelize.
Step 10: Remove the wings from the oven and let them rest for a few minutes.
Step 11: Serve the Howling Hot Wings hot with blue cheese dressing or ranch dressing for dipping. Accompany them with celery sticks and carrot sticks to refresh the palate.
