Step 1: In a bowl, mix together the softened cream cheese, shredded cheddar cheese, crumbled bacon, and diced jalapenos until well combined.
Step 2: Take a slice of bread and spread a generous amount of the cream cheese mixture on one side. Repeat with the remaining slices of bread.
Step 3: Heat a non-stick skillet or griddle over medium heat. Spread about 1/2 tablespoon of butter on one side of each sandwich.
Step 4: Place the sandwiches, buttered side down, on the skillet or griddle. Cook for about 3-4 minutes, or until the bread is golden brown and crispy.
Step 5: Carefully flip the sandwiches over and cook for an additional 3-4 minutes, or until the cheese is melted and the bread is toasted.
Step 6: Once the sandwiches are cooked, remove them from the skillet or griddle and let them cool for a minute or two. Cut each sandwich in half diagonally and serve hot.
Step 7: Preheat your oven to 375°F (190°C).
Step 8: Place the prepared sandwiches on a baking sheet lined with parchment paper.
