Step 1: In a mixing bowl, combine coconut aminos, lime juice, olive oil, minced lemongrass, minced garlic, chopped cilantro, chopped mint, chopped basil, grated ginger, turmeric powder, chili flakes, salt, and pepper. Mix well.
Step 2: Add the chicken drumsticks to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavor.
Step 3: Preheat the grill to medium-high heat.
Step 4: Remove the chicken drumsticks from the marinade and shake off any excess liquid. Reserve the marinade for basting.
Step 5: Place the drumsticks on the preheated grill and cook for about 25-30 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
Step 6: While grilling, baste the drumsticks with the reserved marinade every few minutes for added flavor and moisture.
Step 7: Once the chicken is cooked through, remove from the grill and let it rest for a few minutes.
