Step 1: Preheat oven to 350 degrees.
Step 2: Grease and flour two 9-inch round pans; set aside.
Step 3: In a large mixer bowl, combine the sugar, oil, eggs, and vanilla and mix for 2 minutes on medium speed.
Step 4: Add the flour, baking powder, baking soda, cinnamon and salt and mix for 1-2 minutes more.
Step 5: Stir in the coconut, carrots, and pecans and mix until blended. Divide the batter into the two prepared pans.
Step 6: Bake for 30-40 minutes or until toothpick inserted into the center of the cakes comes out clean.
Step 7: Remove from oven and let the cake cool in pans on wire racks for 5 minutes then remove the cakes from pans and cool completely on wire racks.
Step 8: Frost carrot cake with cream cheese frosting.
Step 9: Cream Cheese Frosting:
Step 10: In a mixing bowl, using an electric mixer, cream the butter and cream cheese until well blended.
Step 11: Add the confectioners’ sugar and vanilla. Beat until very creamy.
Step 12: Spread the frosting on the cake.
Step 13: Sprinkle pecans pieces on top of cake, if desired.
