Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a skillet over medium heat, cook the ground beef until browned. Break it up into crumbles as it cooks.
Step 3: Drain any excess grease from the skillet and return the cooked beef to the heat.
Step 4: Sprinkle the taco seasoning mix over the ground beef. Add a splash of water (according to the instructions on the seasoning packet) and stir well to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.
Step 5: Remove the skillet from heat and set aside.
Step 6: In a mixing bowl, combine the diced tomatoes, fresh corn kernels, red onion, jalapeño pepper, cilantro, lime juice, salt, and pepper. Mix well to make the fresh corn salsa. Set aside.
Step 7: Arrange the corn chips in a single layer on a large baking sheet or oven-safe dish.
Step 8: Sprinkle half of the shredded cheese evenly over the corn chips.
Step 9: Scatter the seasoned ground beef over the cheese.
Step 10: Spread the black beans evenly over the beef.
Step 11: Sprinkle the remaining cheese over the beans.
Step 12: Place the baking sheet or dish in the preheated oven and bake for about 10-12 minutes, or until the cheese has melted and is bubbly.
Step 13: Remove the nachos from the oven and let them cool slightly.
Step 14: Top the warm nachos with the fresh corn salsa.
Step 15: Add any optional toppings of your choice, such as sliced jalapeños, diced avocado, sour cream, or guacamole.
Step 16: Serve immediately.
