Step 1: Mix herbs and zest into creme fraiche saving a bit of herbs for eggs.
Step 2: Heat butter.
Step 3: Beat egg mixture including some herbs and pour into pan.
Step 4: Cook until almost done.
Step 5: On one side put the salmon, dollop creme fraiche mixture on top.
Step 6: Fold over to cover and to heat filling.
