Step 1: Preheat your grill or stovetop griddle to medium-high heat.
Step 2: In a bowl, combine the ground bison meat, red onion, minced garlic, paprika, salt, and pepper. Mix well to evenly incorporate the ingredients.
Step 3: To make the blueberry barbecue sauce, in a small saucepan, combine the blueberries, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, garlic powder, smoked paprika, salt, and pepper.
Step 4: Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally. Let it simmer for about 10-15 minutes, or until the blueberries have softened and the sauce has thickened slightly.
Step 5: Remove the saucepan from heat and let the mixture cool for a few minutes.
Step 6: Using an immersion blender or a regular blender, puree the sauce until smooth. If you prefer a chunkier sauce, you can skip this step and leave some blueberry pieces intact.
Step 7: Return the sauce to low heat and stir in the blue cheese crumbles. Continue to heat the sauce, stirring occasionally, until the blue cheese has melted and incorporated into the sauce.
Step 8: Divide the bison mixture into four equal portions and shape them into burger patties.
Step 9: Grill the bison burgers for about 4-5 minutes per side, or until cooked to your desired level of doneness.
Step 10: During the last couple of minutes of cooking, generously brush the blueberry barbecue sauce onto each side of the burger patties, allowing the sauce to caramelize.
Step 11: Remove the burgers from the grill and let them rest for a couple of minutes.
Step 12: Toast the burger buns on the grill or in a toaster.
Step 13: To assemble the burgers, spread a dollop of the blueberry barbecue sauce on the bottom bun. Place a bison burger patty on top. Add lettuce leaves and sliced tomatoes. Finally, cover with the top bun.
