Step 1: In a large mixing bowl, combine the coleslaw mix, sliced green onions, sliced radishes, and sliced sweet cherry peppers.
Step 2: In a small bowl, whisk together the brine from the jar of sweet cherry peppers, apple cider vinegar, olive oil, honey (if using), salt, and black pepper. Adjust the seasoning to taste.
Step 3: Pour the vinaigrette over the coleslaw mixture and toss well to ensure all the ingredients are coated.
Step 4: You can serve immediately, but if you allow the coleslaw to marinate in the refrigerator for at least 30 minutes, or up to a few hours, the flavors combine better (but the cabbage is less crunchy).
Step 5: Before serving, give the coleslaw a good toss to redistribute the dressing.
