Step 1: In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried dill (or fresh dill), dried parsley (or fresh parsley), ground cardamom, ground nutmeg, black pepper, and salt to make the marinade.
Step 2: Place the boneless, skinless chicken thighs in a zip-top bag or a shallow dish. Pour the marinade over the chicken and toss well to coat them evenly. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results. Allow the chicken to marinate and absorb the flavors.
Step 3: Preheat the grill to medium-high heat. Remove the chicken thighs from the marinade and let any excess marinade drip off.
Step 4: Place the chicken thighs on the grill and cook for about 5-6 minutes per side, or until they reach an internal temperature of 165°F (74°C). The thighs should be nicely charred and cooked through.
