Step 1: Start by preheating your oven to 375°F (190°C). Place the pork tenderloin on a clean cutting board and carefully make a lengthwise slit down the center, without cutting all the way through. This will create a pocket to hold the stuffing.
Step 2: Take the bacon slices and lay them side by side on the cutting board. In a bowl, combine the baby spinach, crumbled feta cheese, sun-dried tomatoes, minced garlic, dried oregano, salt, and pepper. Mix well to create a flavorful stuffing mixture.
Step 3: Spread the stuffing mixture evenly inside the pocket of the pork tenderloin. Once stuffed, fold the pork tenderloin back together to seal in the delicious filling.
Step 4: To keep the stuffing intact during cooking, use cooking twine to tie the pork tenderloin at regular intervals along its length. This will ensure that the filling stays in place and the pork cooks evenly.
Step 5: Place the stuffed and secured pork tenderloin on a baking sheet or roasting pan. Insert a meat thermometer into the thickest part of the tenderloin, making sure it doesn't touch the stuffing. Roast the pork in the preheated oven for approximately 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
Step 6: Once the pork tenderloin reaches the desired temperature, remove it from the oven and let it rest for 5-10 minutes. This resting period allows the juices to redistribute, resulting in a moist and tender final product.
Step 7: After resting, carefully remove the cooking twine and slice the stuffed pork tenderloin into thick, juicy portions. Serve it alongside your favorite sides such as roasted vegetables, mashed potatoes, or a fresh salad.
