Step 1: Preheat oven to 200 degrees F.
Step 2: Line a large baking sheet with parchment paper
Step 3: In a bowl whisk together the first 5 ingredients (eggs - salt) In another pie pan or shallow dish combine the pecans and cinnamon.
Step 4: Over medium low heat heat a cast-iron griddle sprayed with cooking spray.
Step 5: Coat the bread slices in the egg mixture then press into the pecan mixture (shaking off excess). Place bread slices on griddle and cook until browned (4-5 minutes per side). Place on prepared baking sheet and place in oven to keep warm. Serve with blackberry syrup and whipped cream.
Step 6: *NOTE* To make the black berry syrup. --This makes one cup--
Step 7: In saucepan over medium low heat stir together the blackberries, sugar and lemon zest. In a small cup or bowl whisk together 1 cup water and cornstarch. Add cornstarch mixture to berry mixture and bring to a boil over medium high heat, cook stirring occasionally for 15 minutes or until thickened. Let cool before serving.
