Step 1: In a medium bowl, whisk together the milk and starch until very smooth. No lumps allowed! Add the eggs and a pinch of salt (to taste). Whisk until smooth.
Step 2: Place your plate by the stove. Heat a medium non-stick skillet over medium-high heat until quite hot. A drop of water should sizzle when flicked on the pan.
Step 3: Add the butter to the hot skillet. Let it melt but not brown. Using a silicone spatula, scrape the eggs into the pan. Wait for the edges to start bubbling up, WITHOUT STIRRING, about 3 seconds.
Step 4: Quickly remove pan from heat. Start scraping the spatula around the bottom and sides of pan, making a full circle EVERY SECOND, for about 12 seconds. The eggs will have absorbed the butter but still look wetter and looser than you would like.
Step 5: Slide the eggs onto the plate. They'll continue to cook as they sit. Garnish with chopped chives and a grind of black pepper. And an English muffin.
