Step 1: Place all the mixed dried fruit in a bowl and pour over the whiskey and cold tea & allow it all to soak up the liquid overnight.
Step 2: Preheat the oven to 170°C (325°F), Gas Mark 3. Grease and line a 900 gram (2lb) loaf tin.
Step 3: Combine the flour, baking powder, sugar and all the spices in a mixing bowl; then make a well and break in the egg, then using a wooden spoon mix it into the dry ingredients. Adding a little bit of the liquid from the mixed fruit and mix it through. (You are looking for a wet dough, so you will NOT need to not use all the liquid.)
Step 4: Stir in the mixed fruit you are using and stir until everything is thoroughly combined. Spoon the wet dough into your lined loaf tin, & place tin on the middle shelf in the oven; bake for 1 hour.
Step 5: Remove cake from the oven and allow to cool slightly before removing from the loaf tin and placing on a wire rack. When cool, cover in cling film and foil and allow to sit for 1–2 days before cutting into it.
Step 6: Serve Barmbrack in slices, spread with a little whipped butter and enjoy.
