Step 1: In a large dutch oven, heat oil and cook turkey and onion over medium heat for 8-10 minutes, stirring to break up the meat.
Step 2: Add remaining ingredients and cook on medium low, covered, for 3-4 hours. Stir occasionally.
Step 3: Serve topped with grated cheddar cheese and diced onion, if desired.
