Step 1: To barbecue onions; heat oil in a skillet over medium/high heat and saute onions until softened but not brown.
Step 2: Add barbecue sauce of your choice and stir until onion is wilted. Set aside.
Step 3: Combine broccoli and cauliflower in a small bowl with 1 tablespoon of water in microwave and cook on "High" for about 2 minutes, just until veggies are slightly tender. Drain.
Step 4: Combine broccoli/cauliflower with carrots, cabbage, and squash.
Step 5: Spread each tortilla with mayonnaise, then put a line of broccoli/cauliflower/veggie mixture down the center of the tortilla, a line of dill pickle, a line of barbecued onions, a line of lettuce and alfalfa, a slice or two of avocado.Sprinkle to taste with salt.
Step 6: Fold in ends and roll tortilla tightly around vegetables.
Step 7: Wrap tightly in cling wrap and refrigerate. Will keep from 2-3 days. When ready to eat, cut it in half and push cling wrap down but leave one end closed to catch the drippy sauce. Enjoy!
