Ingredients
- 2 pounds potatoes, peeled, chopped,(5 large potatoes)
- 4 eggs, hard boiled
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 1/3 cup sweet pickle relish
- 1 tablespoon onions, grated
- 2 tablespoons pimentos, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon paprika
How to Make

Step 1: Boil the potatoes until soft but not mushy

Step 2: Drain cool

Step 3: Add mayonnaise mustard pickle relish seasoning to taste and pimentos

Step 4: May need more mayonnaise at this point

Step 5: Add 2 chopped eggs

Step 6: Alice the other 2 and put on top as garnish

Step 7: Sprinkle with paprika
