Step 1: Precook chopped bacon if your using to just soft not crisp but releasing most of grease use another skillet for oil
Step 2: Add oil in skillet (go easy if using bacon)
Step 3: And heat oil to medium-low.
Step 4: Add garlic and bacon
Step 5: Cook for three minutes.
Step 6: If using prosciutto,thinly cut with scissors ,I'm using bacon because who can find the stuff in Midwest? Lol so instructions will be for bacon
Step 7: Do not let the bacon brown or get crunchy.
Step 8: Add in the tomato paste
Step 9: Cook a minute
Step 10: Add broth, wine, seasonings
Step 11: Bring to a simmer stirring to mix it all together.
Step 12: Arrange the shrimp in the pan so they lie flat as possible.
Step 13: Continue cooking over medium-low heat, turning the shrimp in the sauce so they are well covered and colored by sauce and and the strips of bacon are all tangled around the shrimp.
Step 14: Cook until shrimp light pink
Step 15: To finish,
Step 16: Squeeze fresh lemon juice all over and stir in the parsley.
Step 17: 1 lemon will make 2 crowns cut spikes in lemon all the way around until can break apart
Step 18: Put olive in center
Step 19: Place in center of plate
Step 20: Put Scampi around lemon crown
