Step 1: Blanch the beans in boiling salted water for about 4 minutes, then drain.
Step 2: To make the dressing, mix the egg yolk, mustard, and wasabi together in a bowl. Gradually add the oil in a thin stream, whisking constantly (you can make the dressing in a food processor or by hand). Add the soy sauce and lime juice to taste, then season to taste.
Step 3: Toss the cooled, blanched beans in the dressing. Garnish with the shallot rings and the furikake seasoning.
