Step 1: In a mixing bowl cream the butter with sugar for about 3 minutes.
Step 2: Add in egg yolk and both extracts; beat until no sugar granules remain.
Step 3: Beat in vanilla pudding mix until combined.
Step 4: In a small bowl combine the flour with baking soda and salt; add to the creamed mixture and beat until combined (the mixture will be dry and slightly crumbly).
Step 5: Remove the dough to a surface and gently knead the dough until it comes together (this will take only a few seconds).
Step 6: Divide the dough into two even pieces then shape into logs.
Step 7: Wrap each log in plastic wrap and refrigerate until hard (about 4 or more hours).
Step 8: Preheat oven to 350 degrees F. Position oven rack to second-lowest position.
Step 9: Slice first log into slightly over 1/4-inch thickness. Coat each slice in sugar. Place onto a greased baking sheet/s.
Step 10: Bake for about 7-8 minutes or until light golden brown.
Step 11: Allow to sit and harden slightly in the pan before removing (the cookies will harden upon sitting in the pan).
Step 12: You can continue the same procedure with the second log or wrap tightly in foil and freeze for another time
