Step 1: Pre-heat oven to 375f
Step 2: In a zip lock bag toss the sweet potato slices with the oil, thyme, garlic and pepper flakes
Step 3: Place the slices single layer on a rimmed cookie sheet
Step 4: Bake for 15 minutes, flip the slices and continue baking until they are tender about another 15 - 20 minutes Garnish with thyme sprigs and serve
