Step 1: Place the celeric and carrots in a large saucepan, cover with water, bring to a boil, cook for about 20 minutes or until they are tender
Step 2: Drain, Combine the celeric and carrots, add butter, coarsely mash them
Step 3: Season with salt and pepper, sprinkle on the parsley. If you wish serve with nob of butter or margerine
