Grilled Grecian Sausage Salad

Ingredients
- 1 lb sweet Italian sausages
- 1 (15 oz) can garbanzo beans, drained
- 1 (6 oz) jar marinated artichoke hearts, drained and liquid reserved
- ½ cup thinly sliced celery
- ¾ cup chopped tomato
- 2 tablespoons sliced black olives
- 2 tablespoons diced red onion
- 2 tablespoons snipped oregano
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ½ teaspoon grated lemon peel
- ½ teaspoon lemon pepper
- 6 cups mixed greens
- Crumbled feta cheese, for garnish
How to Make

Step 1: Cook sausage links at 350F in a shallow baking pan about 12-15 minutes until internal temperature is at least 160F on a meat thermometer. Let cool and slice.

Step 2: Toss sausage slices with beans, artichoke hearts, celery, tomato, olives, onion and oregano.

Step 3: Combine olive oil, lemon juice, lemon peel and lemon pepper and dress the sausage mixture.

Step 4: Serve on a bed of greens, spinkled with feta cheese for garnish.
