Step 1: In bowl
Step 2: Mix together ground beef, egg, Panko crumbs, Worcestershire sauce, garlic powder, salt, pepper, and parsley.
Step 3: Shape mixture into 6 oval patties.
Step 4: Heat 1 teaspoon of oil and 1 teaspoon of butter in a large nonstick skillet over medium heat.
Step 5: Add beef patties and cook 4 minutes per side.
Step 6: Remove from pan and set aside.
Step 7: Add the 4 tablespoons of butter and melt over medium heat.
Step 8: Add onions and cook, stirring frequently for 10 minutes.
Step 9: Turn heat down if they start to burn.
Step 10: Stir in the sugar when they are about halfway cooked.
Step 11: Sprinkle the flour into the skillet.
Step 12: Cook and stir for 1 minute.
Step 13: Add the tomato paste
Step 14: Gradually whisk in the broth and bring to a simmer.
Step 15: Stir in thyme and dry onion soup mix
Step 16: Place ground beef patties back in skillet.
Step 17: Check gravy for seasoning and add salt and pepper to taste.
Step 18: Sprinkle a little Parmesan cheese on top of each patty.
Step 19: Fold each piece of Provolone cheese and half and place one on top of each patty.
Step 20: Turn heat down to low.
Step 21: Cover pan
