White House Crab Soup 1930

Ingredients
- 1 tablespoon butter
- 1 tablespoon flour
- 3 eggs, hard boiled,mashed
- 1 lemon,zested fine
- 1/2 teaspoon salt
- 1/4 teaspoon pepper,(white)
- 4 cups milk
- 1/2 pound cooked fresh crab meat ,(1 cup canned)
- 8 ounces heavy cream,(1/2 cup)
- 1/2 cup sherry
- 1/32 teaspoons worcestershire sauce
How to Make

Step 1: Heat butter

Step 2: Add flour

Step 3: Add seasonings

Step 4: Add eggs

Step 5: (I'm adding the sherry here to cook off alcohol but they added at end)

Step 6: Add the grated zest of 1 lemon

Step 7: In another pan heat milk almost to boiling

Step 8: Add slowly to soup
How to Make

Step 9: Add crab

Step 10: Add cream and dont boil just simmer until warmed

Step 11: Check for seasonings

Step 12: Add 2 dashes Worcestershire sauce
