Ingredients
- 6 eggs
- 2 tablespoons milk
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1/2 cup baby spinach
- ½ cup red onion, chopped
- 2 tablespoons black olives,chopped
- 2 potatoes,cooked peeled and sliced
- 2 tablespoons olive oil
How to Make

Step 1: Heat oil in cast iron skillet

Step 2: And add potatoes and onions brown

Step 3: Mix eggs seasoning (to taste)and milk ,(they said cream)

Step 4: Pour over potatoes

Step 5: Sprinkle on olives and spinach

Step 6: Cook until set

Step 7: They popped it under broiler until browned
