Step 1: Combine all the ingredients except the pork and the food coloring in a saucepan.
Step 2: Heat for 2 minutes until everything is melted and you have a smooth sauce.
Step 3: Remove most of the top layer of fat from the pork.
Step 4: Pierce the pork all over with a fork. Season gently with a little salt.
Step 5: Place the pork in a bowl.
Step 6: Add food coloring to the sauce and stir to combine.
Step 7: In a large bowl
Step 8: Combine 1 cup of the sauce with the pork.
Step 9: Rotate the meat several times so it is well coated on all sides with the sauce.
Step 10: Put in a gallon ziploc bag and put in the refrigerator overnight.
Step 11: Reserve the rest of the sauce for cooking the next day.
Step 12: Preheat oven to 350 degrees Fahrenheit
Step 13: Shake off the excess sauce.
Step 14: Place pork on a rack in a roasting pan lined with aluminum foil.
Step 15: Roast for 3 hours
Step 16: Baste it every 1/2 hour with the reserved sauce.
Step 17: Let it rest for at least 15 minutes.
Step 18: Slice and brush with the remaining sauce
