Step 1: Preheat oven to 425 degrees F. Set oven rack to lowest position. Line 13 x 9-inch baking pan with foil.
Step 2: Pat chicken dry with a clean paper towel and sprinkle liberally with with garlic powder and Creole seasoning.
Step 3: In a heavy Ziploc plastic bag, combine 1 cup flour, 1 teaspoon black pepper, cayenne pepper, if using adjust heat as desired, 1 teaspoon paprika, 2 teaspoons garlic powder, salt and 1/2 to 1 teaspoon Creole seasoning; seal bag and shake to mix the spices
Step 4: Shake chicken in the bag with flour and seasonings. Add butter cubes into baking pan on top of the foil and place in oven until it sizzles. Place chicken in dish skin side facing down.
Step 5: Bake 30 minutes. Remove from oven and turn the chicken skin-side up.
Step 6: Reduce temperature to 325 degrees F and continue to bake for 18-20 minutes longer or until chicken is cooked through (this depends upon the weight of the chicken). It will be a beautiful golden brown and very tender when done.
