Step 1: In a bowl combine the first 12 ingredients until thoroughly combined; transfer to a large heavy resealable plastic bag. Add in the chops. Seal bag and massage the chops in the marinade. Allow to sit out at room temperature for 1-2 hours then refrigerate 24-48 hours tossing the bag a few times during refrigeration time for even marinating (yes 1-2 hours before placing in the refrigerator, and there is a counter time again before grilling).
Step 2: IMPORTANT! remove the lamb and discard marinade then allow the lamb to sit out at room temperature for 2 hours before gilling. Grill chops as desired (about 4-5 minutes per side -- the finished chops should be pink and juicy with a dark brown, crusty exterior) Serve immediately.
