Step 1: In a small food chopper or by hand finely chop the chillies and garlic
Step 2: Heat the oil in a large skillet (it needs to have a lid) heat the chillie/garlic for a minute. add wine and mussels, cover
Step 3: Cook over medium heat for about 10 minutes. The mussels cook very quickly.
Step 4: Stir in the cilantro. Discard any mussels that did not open
Step 5: Enjoy using the bread to soak up the lovely sauce
