Step 1: Toast the bread slices very slightly
Step 2: Just enough to have them dry out a bit. Let cool.
Step 3: Crumble.
Step 4: Add the milk and allow the bread to soak up the milk.
Step 5: If too wet squeeze it out with hands.
Step 6: Heat the olive oil
Step 7: Saute the onion until soft and translucent and slightly golden color.
Step 8: Add garlic last couple minutes dont burn it
Step 9: Let cool a little.
Step 10: In a large bowl
Step 11: Add the pork, egg, parsley, salt, pepper, bread that has been moistened with the milk, and the cooled sauteed onions/garlic mixture.
Step 12: Mix really well with hands.
Step 13: Shape into an oval approximately 3" high x 4" wide.
Step 14: Place into a 13"x9" baking dish.
Step 15: Bake in preheated 350°F oven for 45 minutes cover
Step 16: Check at 45 minutes
Step 17: At this point any grease may be removed before glazing.
Step 18: Mix ketchup & mustard with the brown sugar.
Step 19: Spread on the top of the meatloaf and continue baking it for another 15 minutes. (Check for doneness it said bake another 45 minutes but I'm guessing it would be like a hockey puck with that much cooking)
Step 20: Uncovered.
