Step 1: In a deep skillet
Step 2: Saute the meat, onion, and garlic over medium-high heat and cook until mostly cooked through.
Step 3: Season with salt and pepper.
Step 4: Add the cumin, chili powder, oregano, Rotel, hot sauce, and stock.
Step 5: Bring to a boil, lower the heat, and simmer partially covered for at least 1 hour or until most of the liquid has cooked down.
Step 6: Skim off fat while cooking.
Step 7: Salt to taste.
