Step 1: Place in mixing bowl meat, onion, garlic, thyme, wine, salt and pepper.
Step 2: Mix thoroughly with the fingers.
Step 3: Divide into 8 parts, form meat into patties 1-inch thick.
Step 4: On each of four patties place slice of cheese and two sliced mushrooms. Cover with remaining patties sealing edges together carefully.
Step 5: Broil over charcoal fire to desired doneness.
Step 6: (Or pan broil in cast-iron skillet on top of stove by heating ungreased skillet until red hot.
Step 7: Scatter surface with generous sprinkling of salt.
Step 8: Plunk in hamburgers, broil over high heat, turning once.)
