Step 1: Saute diced vegetables except potatoes in butter
Step 2: Add flour and spices
Step 3: Blend
Step 4: Add veal broth and stir constantly
Step 5: Add the cooked tripe and bring to a boil
Step 6: Add diced potatoes and herbs
Step 7: Bring to a boil then simmer for 20 minutes until potatoes are tender
