Step 1: I a bowl whisk together dry ingredients (flour - pepper). Place the eggs and panko crumbs in a separate bowl or use pie dishes for all three.
Step 2: In a large salad bowl add the green and then drizzle 2 tablespoons oil over and toss. Cut one lemon in half and squeeze the juice over the greens; toss and season with salt and pepper.
Step 3: Working with one slice of cheese at a time, dredge mozzarella in flour mixture and then dip in egg and then dredge in flour again and then in the panko crumbs. Transfer each slice of cheese to a plate and repeat for the remaining slices of cheese.
Step 4: In a skilet over medium heat heat 4 tablespoons of oil and then carefully place the mozzarella slices in the pan and cook turning halfway through for a total time of about 5 -10 minutes. With tongs transfer the mozzarella fritters to paper towels to drain.
Step 5: Arrange the fritters on top of the salad. Cut one lemon in wedges and add to salad. Serve with pest, bread and lemon wedges.
