Step 1: Saute onions and carrots in butter
Step 2: When onions are light brown
Step 3: Add flour and cook a couple of minutes
Step 4: Add chicken stock (or Vegetable broth if going vegetarian)
Step 5: Simmer 20 minutes until carrots are cooked
Step 6: When done season to taste with salt and nutmeg
