Step 1: Preheat oven to 425 and lightly oil a 9-inch square baking dish.
Step 2: Combine soymilk and vinegar and let stand.
Step 3: In a large bowl, mix dry ingredients.
Step 4: Add soymilk mixture and oil and stir just until blended.
Step 5: Spread the batter into pan and bake for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
