Step 1: FOR THE SALAD
Step 2: Prepare Vegan Coconut Bacon according to directions provided on the link.
Step 3: Slice potatoes in halves or quarters
Step 4: In a large pot, cover potatoes with water and boil for approximately 15 minutes (this varies due to the size of potatoes, so check for tenderness with a fork. (Since I quartered my baby potatoes, it took under 15 minutes to cook my potatoes. Larger potatoes, however, take around 30 minutes).
Step 5: Chop onions, chives, dill, celery
Step 6: FOR THE DRESSING
Step 7: Whisk all ingredients together; set aside
Step 8: Serve
Step 9: Once potatoes are drained, transfer them to a large bowl.
Step 10: Add chopped vegetables
Step 11: Add coconut bacon
Step 12: Pour dressing over the top.
Step 13: Toss together
Step 14: Serve while warm or cover and served cold.
