Step 1: Preheat the oven to 375 degrees.
Step 2: Grease and flour a 9-inch springform pan.
Step 3: Sift the flour and baking powder together.
Step 4: In a large bowl
Step 5: Beat the egg whites with an electric mixer until frothy.
Step 6: Add the sugar and beat to form stiff peaks,
Step 7: Another bowl
Step 8: Add the egg yolks
Step 9: Turn down the mixer to a slower speed and add one-third of the flour and one-third of the milk.
Step 10: Repeat until all the flour and milk are incorporated, then add the vanilla.
Step 11: Fold in egg whites
Step 12: Pour the batter into the prepared pan and bake for 35 to 45 minutes or until a toothpick inserted into the center comes out clean.
Step 13: Let cool for 5 minutes and remove from the pan.
Step 14: Cut the cake into 3 layers.
Step 15: In a bowl, combine the evaporated milk, condensed milk and cream.
Step 16: Stir in the brandy.
Step 17: Pour one-third of the milk mixture over the bottom layer of cake, set the middle layer on top,
Step 18: Pour one-third of the milk mixture over it
Step 19: Cover with the top layer of cake and pour the remaining milk mixture over it.
Step 20: To prepare the frosting,
Step 21: Beat the egg whites, salt and cream of tartar in a large bowl until the whites hold soft peaks.
Step 22: Set aside.
Step 23: Mix the water, sugar and lime zest in a small heavy saucepan.
Step 24: Bring to a boil over medium-high heat and cook until a candy thermometer registers 235 degrees or soft ball. Remove from heat
Step 25: And add to the beaten egg whites in a thin stream.
Step 26: Beat for 6 minutes or until the mixture is stiff.
Step 27: Cover the top and sides of the cake with the frosting and refrigerate until just before serving.
